First thing is "Don't panic". The Schema extension is pretty straightforward and it doesn't need you to reboot any of your precious DCs.
You can do it without actually upgrading the Operating System on your DCs. Resolve the schema conflict, allow the change to replicate between all replication partners, and then run Adprep. I dont think Domain Admin is a member of Schema Admin by default. You must be a member of Schema Admin to make this changes. Read this thread, scroll all the way to near the bottom, look for the Accepted Solution. Is that solution in line with what you did?
